3Meanwhile, toss the beef sirloin tips in a large bowl with the peppers, shallots, Southwest spice blend , and a large drizzle of olive oil . Season generously with salt and pepper . 4Place the skewers onto a baking sheet . Place under the broiler for ⏱️ 5 minutes to ⏱️ 7 minutes , turning halfway through, until lightly charred and cooked to desired doneness. -
5Heat a large drizzle of olive oil in a large pan over medium-high heat. Add the zucchini. Cook, tossing, for ⏱️ 4 minutes to ⏱️ 5 minutes , until slightly golden. Toss the couscous, lemon zest, and parsley into the pan. Add a squeeze of lemon and a large drizzle of olive oil. Season generously with salt and pepper. -
6Finish and serve: Serve the beef and pepper skewers on a bed of zucchini and couscous salad. Garnish with the reserved parsley leaves and enjoy!
